Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Place Oreo cookies in a food processor and pulse into fine crumbs.
  3. In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth.
  4. In another bowl, whip heavy cream until stiff peaks form.
  5. Fold the whipped cream into the cream cheese mixture.
  6. Line a muffin tin with cupcake liners and add a layer of Oreo crumbs.
  7. Spoon the cheesecake mixture over the crumbs and smooth the top.
  8. Bake for 15 minutes, then let cool before refrigerating for at least 2 hours.
