Moist Vanilla Cake with Strawberry Filling

A deliciously moist vanilla cake filled with fresh strawberry filling.

  • 1 and 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with milk.
  7. Pour the batter into greased cake pans.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let the cakes cool completely.
  10. In a bowl, mix sliced strawberries with powdered sugar and let sit for 10 minutes.
  11. Spread the strawberry filling between the layers of the cooled cakes.

  • For added flavor, consider adding a bit of lemon zest to the batter.
