ONE PAN Balsamic Chicken and Veggies

This one pan balsamic chicken and veggies dish is an easy weeknight delight packed with flavor and nutrition.

Ingredients

  • 4 pieces chicken thighs
  • 2 cups broccoli florets
  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon dried basil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the balsamic vinegar, olive oil, garlic, salt, pepper, and dried basil.
  3. Add the chicken thighs to the bowl and coat thoroughly with the marinade.
  4. Arrange the marinated chicken on a baking sheet along with the broccoli, bell pepper, and cherry tomatoes.
  5. Drizzle any remaining marinade over the vegetables.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
