Poor Man’s Stew

Ingredients

  • 4 slices turkey bacon
  • 1 pound chicken ham
  • 4 cups mixed vegetables
  • 6 cups chicken broth
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add onion and garlic to the pot and sauté until fragrant.
  3. Add chicken ham and mixed vegetables, cooking for a few minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add potatoes, thyme, and pepper, then reduce heat.
  6. Simmer for 30 minutes until potatoes are tender.
  7. Chop the crispy turkey bacon and stir it back into the stew before serving.

Notes

  • Feel free to adjust the vegetables based on seasonality.
  • This stew can be made ahead of time and stored in the fridge.
