Pumpkin Cream Cheese Muffins

  • 1 cup pumpkin puree
  • 1/2 cup cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix pumpkin puree, sugar, eggs, and oil until smooth.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Drop a small dollop of cream cheese into the center of each muffin.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let cool before serving.

Notes

  • For an extra touch, sprinkle with cinnamon sugar before baking.
  • Can substitute pumpkin puree with sweet potato puree if desired.
