Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicken, cherry tomatoes, corn, black beans, avocado, red onion, and cilantro.
  2. In a separate small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or refrigerate for later.
