Shrimp Avocado Salad

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, bring water to a boil and add the shrimp. Cook until pink, about 2-3 minutes. Drain and cool.
  2. In a large bowl, combine shrimp, avocados, cherry tomatoes, red onion, and cilantro.
  3. In a separate bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately for best flavor.
