  • 1 can black beans
  • 1 cup rice
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 red bell pepper
  • 1 onion
  • 2 cloves garlic
  • 1/4 cup cilantro

Instructions

  1. Dice sweet potatoes, onion, and bell pepper.
  2. In a skillet, heat olive oil over medium heat.

  4. Add sweet potatoes, cooking until just tender.
