  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 2 teaspoons taco seasoning
  • 1 cup shredded cheese
  • 1 avocado

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchinis and chicken breasts into bite-sized pieces.
  3. In a bowl, mix the chicken, zucchinis, cherry tomatoes, olive oil, and taco seasoning together.
  4. Spread the mixture on a baking sheet and bake for 25-30 minutes.
  5. Once baked, top with shredded cheese and return to the oven for 5 minutes to melt the cheese.
  6. Serve with sliced avocado on top.
