Vegan Chewy Molasses Sandwich Cookies with Eggnog Frosting

  • 1/2 cup molasses
  • 1/2 cup coconut oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup non-dairy milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together brown sugar, coconut oil, and molasses until well combined.
  3. In another bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, and salt.
  4. Add the dry ingredients to the wet mixture, along with vanilla extract and non-dairy milk. Mix until a dough forms.
  5. Drop tablespoon-sized balls of dough onto a lined baking sheet.
  6. Bake for 10-12 minutes until the edges are firm.
  7. Remove from oven and let cool before frosting.
  8. For the eggnog frosting, mix together powdered sugar, non-dairy eggnog, and a bit of cinnamon until smooth.
  9. Spread frosting on cooled cookies and enjoy!

Notes

  • These cookies can also be iced with a regular vanilla frosting if you prefer.
  • Store leftover cookies in an airtight container.
