Vegan Moussaka with Lentils

  • 1 cup lentils
  • 2 large eggplants
  • 1 large onion
  • 3 cloves garlic
  • 1 can diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 2 cups potatoes
  • 1 cup plant-based milk
  • 3 tablespoons nutritional yeast
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and sprinkle with salt, let sit for 30 minutes.
  3. Rinse the lentils and cook them in water until tender.
  4. In a pan, heat olive oil and sauté onions and garlic until translucent.
  5. Add tomatoes, cinnamon, nutmeg, and the cooked lentils, simmer for 10 minutes.
  6. Layer the sliced potatoes and eggplants in a baking dish, alternating between them.
  7. Pour the lentil mixture over the layers.
  8. Mix plant-based milk and nutritional yeast, pour over the top.
  9. Bake for 45 minutes until golden brown.
