Ingredients

  • 1 cup rice
  • 2 cups chicken broth
  • 3 slices turkey bacon
  • 1/2 cup diced chicken ham
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  2. Add turkey bacon and chicken ham, cook until bacon is crispy.
  3. Stir in the rice and toast for a couple of minutes.
  4. Pour in the chicken broth, add salt and pepper. Bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes.
  6. Remove from heat, let sit for 5 minutes, then fluff with a fork.
  7. Garnish with fresh parsley before serving.
